Skewer of turkey breast with vegetables and potatoes "huancaina" style. Papas a la Huancaína (Huancayo style potatoes) is a Peruvian dish of boiled yellow potatoes in a spicy and creamy sauce. The name is derived from Huancayo, a city in the Peruvian highlands but it has become a staple of everyday and holiday cuisine throughout Peru. It's displayed here as it's typically served: cold as a starter over lettuce leaves and garnished with black olives, white corn kernels and hard boiled egg quarters. The huancaína sauce is made of fresh white cheese, vegetable oil, yellow Peruvian pepper, evaporated milk and salt mixed in a blender.
