Amelia "Lindy" Posada, makes preperations inside Lindy & Grundy butcher shop on Fairfax Ave. in West Hollywood on March 10, 2011. Posada and Nakamura apprenticed at Fleisher's meats in Kingston, N.Y., for eight months before moving west in August of 2010. They sell locally sourced, pasture–raised organic meat. Posada grew up in Pasadena, and Nakamura is from Tokyo. Their butcher shop opened up for business on April 5, 2011.
